Hugo unknowingly began his restaurant career at a small, family-owned Mexican restaurant as a way to earn extra money while in college. What started as a part-time job soon after motivated Hugo to change his major from engineering to business administration so he could dedicate his life to a career in the restaurant industry. Over a career spanning 30 years, Hugo has held various management positions, including VP of Operations at Al Copeland Investments, a Louisiana-based restaurant group. In 2011, he joined Margaritas as president, his focus on the company’s continued growth through family-owned and franchised locations.
