International speaker, author and business owner, Mark began his career in manufacturing accounting for a variety of industries before joining the Bravo/Brio Restaurant Group (BBRG) in 2002. Seven years later, he founded Return On Ingredients® LLC, a leading software and consulting company specializing in accurate recipe costing, effective menu engineering, benchmarking and improving the overall profitability of restaurant-industry operations.

As speaker and author, Mark has addressed nearly 100 different tradeshows, expos and events in the United States and Canada and has penned dozens of articles and several books addressing the foodservice industry. He is a Lecturer for The Ohio State University and an adjunct faculty member for Ohio University teaching Food, Beverage & Labor Cost Controls and Hospitality Accounting, respectively. He also sits on several hospitality advisory boards for Ohio University and Hocking College.
Mark holds a Masters in Business Administration (2005) and a Bachelor of Arts majoring in Accounting and Business Administration (1993) from Ohio Dominican University in Columbus, OH.
